NASCAR Nibbles: Rocky Road Fudge

Although this the race at Watkins Glen International is still months away, I thought a little sweet treat just before Easter would be a good thing.

Watkins Glen is one of two road courses on the Sprint Cup Schedule, what would be better to snack on during the race than some rocky road fudge?

This is one of those need-no-thermometer foolproof recipes, so it can be whipped up during the pre race show in no time.

I was a bit apprehensive before taking a bite – fudge is generally so sweet anyway, and I was afraid that the marshmallows would send this over the top. It actually lightened it up and made it all the more fabulous.

I am in love with the texture – the creaminess of the fudge, the sponginess from the marshmallows, the crunchiness of the walnuts. A trifecta.

Even with no race this weekend, this would make a great last minute treat,  in case the Easter Bunny disappoints.

Rocky Road Fudge

Yield: 24 pieces

Serving Size: 1 piece

Ingredients

  • 1 (12 oz) package Semi-Sweet Chocolate Chips
  • 1 (14 oz) can Sweetened Condensed Milk
  • 1 tsp vanilla extract
  • 3 c miniature marshmallows
  • 1 1/2 c coarsely chopped walnuts

Instructions

  1. LINE 13 x 9-inch baking pan with foil; grease lightly.
  2. MICROWAVE chips and milk in large, microwave-safe bowl on HIGH (100 percent) power for 1 minute; stir.
  3. Microwave at additional 10- to 20-second intervals, stirring until smooth.
  4. Stir in vanilla extract.
  5. Fold in marshmallows and nuts.
  6. PRESS mixture into prepared baking pan.
  7. Refrigerate until ready to serve.
  8. Lift from pan; remove foil.
  9. Cut into pieces.
